Anybody on my flist familiar enough with Quebecois speech patterns to tell me how they'd say something equivalent to "fuck off and die, shithead" in their local French?

Hmm. Lots of ways to go about it. Me? I'd say something along the lines of (in joual):

"Va chier pis mange d'la marde, esti' d'chien sale."
