I am cooking Chicken Divan to be my lunch for the next few days.  (I can microwave it when I come home from work on my lunch break, and I will be well-fed and yum!)  Chicken divan is one of my favorite dishes, but since Justin doesn't like having stuff on his meat I can't make it to share for dinner, so I am making it while he is at school to eat by myself. 

I was going to bake a pumpkin cake as well, but we don't have any baking soda, just baking powder, so I guess I have to wait.  Also the recipe calls for four extra-large eggs and I have only medium eggs so I do not know what to do about that.

My microwave is a late '70s Tappan and it is a piece of shit.  It doesn't have a lazy susan in it, it makes the entire counter feel hot when you use it for more than a couple of minutes, and it cooks erratically.  It took me 15 minutes to cook a pound of chicken - three times as long as it took in the nicer microwave back home!!  When you cook popcorn, you have to watch it very carefully; most of the time it pops so strangely that half the kernels are burnt and the other half haven't even popped yet.  I hate this microwave.

And now there is a delicious Pumpkin Cake in the oven!

The recipe book gave it as a cookie recipe, but seriously, this is a very thin batter and it gives you a CAKE.  There is nothing even vaguely cookielike about it.
